In the process of making Gur or jaggery, raw sugarcane juice is boiled in the traditional manner over an extended period of time. When the syrup reaches a certain consistency, it is put into a centrifuge and spun at high speed. This separates the sugar which crystalizes to form raw unrefined or natural brown sugar that is in this packet. It is soft and contains molasses; this gives the color, distinct taste and mineral content of nutritional value. The sugarcane from which the juice is extracted has been cultivated by a family of organic farmers who are registered with the Uttarakhand Organic Commodities Board, Dehradun, an organization that keeps checking on the integrity of farming practices and post-harvest processing and marketing.
