Kharchia Wheat Flour (Low Gluten)

Kharchia wheat is a native variety that has been traditionally grown in the sodic-saline soil of the Marwar region of Rajasthan. Though it is low yielding, it is a hardy strain much preferred by cultivators with small holdings. Kharchia wheat flour is prized for its nutritional value, high fibre and Low gluten.

Prepare the dough from this flour as normal, after which indents should be made in the dough with fingers and thumb and filled with water. Let this sit for 30 minutes before doing the final kneading.
