Star anise (Illicium verum) is widely used in preparing both vegetarian and non- vegetarian biryani  an also forms part of the powder that goes into making masala chai. Originally from South China, the evergreen tree from which this fruit is harvested, is cultivated across South East Asia and is also grown in India. It has a sweet flavour and pairs well cinnamon and nutmeg and is used in making jams and puddings. The oil of this fragrant spice is also used in soap making, mouthwash and perfumes.
