Mace, 50g
Mace or Javitri is the reddish covering that covers the nutmeg seed. More subtle in flavour than nutmeg, while drying this delicate spice assumes an orange and rusty hue and becomes brittle. It is used for flavouring vegetable and meat dishes and in bakes, pickles and preserves. It contains essential oils, minerals and vitamins and is also used in traditional herbal medicines.
Sufalaam mace comes from our partner estate in Kerala where over decades a few trees have been carefully tended in the kitchen garden.
